Don Guerra of Barrio Bread won the 2022 James Beard Award for Outstanding Baker, and in celebration of this great honor, we have collaborated to bring you his signature Heritage Flour blend used in his bakery every day.
The Barrio Grains Flour blend features a stone milled whole wheat Hard Red Spring flour with marvelous bread-making properties. It is blended with a Blue Beard Durum flour for depth of flavor and a bread flour to enhance performance. Can’t make great bread without great flour
I’ve been baking all our family’s bread for five years now. When I heard about Hayden flour mills from two fabulous bakers with large YouTube audiences, I was eager to give it a try. Hayden’s bread flours have a depth of flavor that makes my breads command respect and admiration in our neighborhood. There’s just no flour like where I live, even in the specialty groceries. Before trying the Barrio Bread blend, I played with various combinations of whole wheat flour, white bread flour, and occasionally a touch of rye flour. This blend stands very well by itself and that has simplified my bread making and flour storage. Bravo!
