Don Guerra of Barrio Bread won the 2022 James Beard Award for Outstanding Baker, and in celebration of this great honor, we have collaborated to bring you his signature Heritage Flour blend used in his bakery every day.
The Barrio Grains Flour blend features Arizona-grown stone milled whole wheat Hard Red Spring flour with marvelous bread-making properties. It is blended with a stone milled, finely sifted Blue Beard Durum flour for depth of flavor and a high-protein bread flour to enhance performance. When you bite into the chewy texture and amazing crust of your own sourdough creation, you may just nominate yourself for an award.

This Flour makes a great Sourdough Loaf. We are very pleased with the taste and softness of the bread. Will buy again and again.
Great bread flour
Makes great sourdough bread, though the flour or milling seems a bit inconsistent. The first bags I got when it was newly introduced were the color of a very very light whole grain flour and had amazing flavor. The subsequent two purchases have been more like a white flour, with a less noticeable flavor. Still makes lovely bread, but I preferred the slightly grainier version.
I got the baker's bundle and made my first loaf with Barrio Grains. I've been making sourdough for about a year now and before that started with no-knead bread. I've been using KA flours. I let my sourdough loaf cool overnight and toasted a slice in the morning to have with my tea. I was just browsing my phone and OMG there was a party in my mouth! I am not kidding! My loaf was a little under proofed and it is still so great. I am a fan!
Great Bread Flour
I enjoyed working with this flour for sourdough bread. The crust was a nice color and crispy, the crumb soft and taste is delicious! I hope to order this flour again.
I love this flour and I have ordered several pounds over time. It is pricey which is understandable due to its pedigree but it adds a flavor to my finished loaf that makes it unique. But the shipping doubles the price making it an extravagance for a fixed income baker. Can this flour be purchased directly in Tucson?
