Einkorn is the original wheat, the very first grain ever cultivated, going back nearly 10,000 years to farmers working the Fertile Crescent. It's never been hybridized since, so what you're holding is essentially the same grain those first farmers grew: small, golden kernels with a warm, buttery hue and a flavor that leans nutty and lightly sweet, with a tender chew once cooked.
Boil the whole berries and stir them into grain bowls, soups, and salads for a chewy, golden addition, or simmer them low and slow for a creamy morning porridge. Freshly mill the berries at home and you'll get a flour with that same golden color, wonderful in pancakes, quick breads, and rustic loaves.
