If wisdom had a flavor, it would taste like Einkorn. Over 10,000 years old, we call Einkorn the great-grandparent of modern wheat. It’s the oldest wheat known to man – a grain that has seen it all. A slender, petite grain, it’s far less genetically complex than bread wheat, making it easier to digest. While the extra casing (hull) is very difficult to remove, we think the flavor and historical significance is worth the effort!
This whole wheat ancient flour has a complex flavor that evokes a sense of its deep history, sending your tastebuds on a journey back in time. Bring this ageless flour from past to present in the form of homemade bread, baked goodies, and even pasta.

Game changer. Earlier sourdough successful but this plus proof and rye from Hayden bring better flavor and texture!

not for bread machine
Does not work in my bread machine. The dough is either too thick and keeps away from the mixer, or too thin to maintain is shape. Did not try making a batch by hand.

We're sorry to hear you did not have success with our Einkorn flour in your bread machine. Einkorn flour is particularly tricky to work with when making bread as the protein and gluten structure is quite different from its predecessors. We invite you to join our Facebook Group, Homecook Homebase (https://www.facebook.com/groups/homecookhomebase), to ask other Hayden fans about tips when using Einkorn flour in the bread machine, to see if there are any ideas out there. In the meantime, our Simple Artisan Bread Recipe is a no-knead, easy-to-follow method. However, the Einkorn flour will not achieve the full, round loaves. Einkorn Flour makes flatter, more dense loaves when used on its own. Delicious flavorful flour
Wonderful product. Easy to work with. If I could add a photo you would see a plateful of blondies made with the recipe from Emma Zimmerman’s cookbook only with chocolate chips and pecans instead of white chocolate and raspberries.

First loaf
I tried the Einkorn Flour for the first time using a no knead whole wheat recipe using a cup of it with 2 cups of bread flour and the result was really good; nice rich nutty flavor and a smooth bread texture. I might try adding a bit more of the Einkorn Flour in my next loaf, to see if the results are much different. Very happy with what I got but I love to experiment.
