I have been making artisan bread for over 25 years. One of my regular additions is barley malt or barley malt syrup, as a flavor enhancer. I thought the purple barley flour might also add flavor, and some interesting color. My recipe was 40 percent barley and 60 pct bread flour, 70 pct hydration. Crust was fantastic, but the crumb was uninteresting and the taste bland. And there was no purple tinge.
