Our artisan pasta features stoneground Heritage Durum Semolina, a wheat variety that thrives in our arid desert climate. After mixing our durum flours with cold water, we extrude the pasta through a chilled bronze die to preserve all the flavor and goodness of the grain and use a slow-drying method to enhance the texture.

From seed to plate, every step of our process is thoughtfully crafted to create a rich, mindful and delicious experience for you and your family.

Shells, fashioned after the conch shell, have a beautiful textured exterior and smooth interior, perfect for holding sauce on both the inside and outside of the pasta — so every bite is full of flavor!

In general all of your products are just wonderful. So much so, they are worthy of gifting. My favorite is your all purpose flour. The yellow corn polenta is also so good. To me polenta is 'grits' as our from the south grandma served that often. The yellow version is hard to find, so thank you so much. Hope you will continue to produce your fine food products.
