Brought to North America by Spanish missionaries around 1640, White Sonora was first planted in the Sonoran Desert, near the present-day United States-Mexico border.  It has a mild, sweet flavor ideal for any baked good.

Our All Purpose Flour contains stone milled, lightly sifted White Sonora whole grain flour blended with high-protein bread flour for performance that can be freely substituted 1:1 in your favorite recipes. Its sweet essence and creamy flavor will quickly become your pantry favorite, making the other flours jealous.

Generally Pleased

I’m happy with the flour, but one of the bags arrived exploded, and there was actually another bag that had a hole in it, which I wasn’t too happy about. I did get a replacement bag for the exploded one-the one with the hole I just kept.

Everything is Better With Hayden Mills

Breads are better, pasta is better, cookies are better, pastries are better. The all purpose flour from Hayden Mills truly makes a difference in baked goods. They have better density and seem to hold moisture perfectly. I have turned my sister/pastry perfectionist and my sourdough aficionado bread baking friend onto Hayden Mills flours and they also love the difference it makes.

Minor issue, quickly resolved

For some reason my order only shipped 1/5 bags. One email, and the problem was quickly resolved. The second part of the order was shipped super fast!

wonderful flavor, excellent performance

After reading about the deliciousness of freshly milled flour (vs. flour that might have been sitting on a shelf for a while) I found that we have a local flour mill right here in the Valley! Your unbleached white AP flour has a depth of flavor that I’ve never encountered in standard “good" flour. I love that it’s Sonora Wheat, too. My sourdough bread made with your flour has a more complex character and flavor than with standard AP flour or bread flour. When there are only 3 ingredients (flour, water, and a little salt, plus starter) the quality of the flour has a big impact! Even the color is different; a little more golden than white. Terrific crust. I made another batch with half Hayden AP and half of your “Proof” flour. The dough had excellent rising power and the loaves had great oven spring. And so delicious! A true game-changer. Thank you, Hayden Mills family.
