What You'll Need
3 cups water
3/4 cups Polenta
2/3 cup Parmesan cheese
2 tbsp. butter
Salt and pepper to taste
Bring 3 cups salted water to a boil in a large pot.
Stir the Polenta into the boiling water. When the water returns to a boil reduce the heat and simmer for 45 minuets, stirring frequently. Start testing the texture of your polenta at 20 minutes and cook to your desired consistency. The polenta will soak up the water and soften.
Last, stir in the cheese and butter. Add salt and pepper to taste and serve.

Overnight shortcut: In a large pot, cover polenta with 3 cups boiling water, cover and let sit for 8-12 hours. Then bring to boil, reduce the heat and simmer for 15 minuets, stirring frequently. stir in cheese and butter. Add salt and pepper to taste.
