What You'll Need
1 1/2 cups Pastry Flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain yogurt
1 cup sugar
3 eggs
2 teaspoons grated lemon zest
1/2 teaspoon pure vanilla extract
1/2 cup olive oil
Lemon Glaze:
1 tablespoon lemon juice
1/2 cup powder sugar

Preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9x5 inch loaf pan.

Mix Pastry Flour, baking powder and salt in a bowl. In another bowl whisk yogurt, sugar, eggs, lemon zest, vanilla, and oil together.

Add dry ingredients into the wet ingredients and mix thoroughly to work out the clumps. Pour batter into the floured pan and bake for 50-60 minutes, or until a toothpick comes out clean.

Cool for about 15 minutes before flipping the loaf out onto a cooling rack. While the cake is still warm, pour the lemon glaze over the cake and allow to fully cool before serving.
Makes 1 loaf.
