What You'll Need
2 1/3 cups Hayden Flour Mills Pasta Flour
3 large eggs
3 tablespoons water
Directions
-
Mound pasta flour in the middle of a large cutting board. Form a small indentation in the middle of the flour - it should look like a volcano.
-
Place the eggs and water into this indentation. With a fork, slowly incorporate the egg and water into the flour. When the dough starts to form a ball start kneading the dough, using the heel of your hand, until it is smooth.
-
Cover dough in plastic wrap and allow the dough to rest at room temperature for 30 minutes. At this point you can roll the dough into any shape you like.
-
To form noodles, cut the dough into fourths. Flour a large work area and use a floured rolling pin to roll the dough until it is the thickness of a dime. Use knife to cut the dough into ¼ inch wide strips.
-
To cook, add noodles to a pot of salted boiling water and cook for 4-8 minutes or until Al Dente.
Serves 4-6.
