What You'll Need
1 cup Hayden Flour Mills White Sonora Wheat Berries (cooked and cooled)
1/2 cup coarsely chopped walnuts
1/4 cup finely chopped parsley
2 tablespoons finely chopped green onion
1/4 cup finely chopped dried figs
1/4 cup finely chopped dried cherries
1/2 cup crumbled goat cheese
Dressing:
2 tablespoons apple cider vinegar
1 tablespoon honey
3 tablespoons olive oil
Juice of half a lemon
Directions

Place 1 cup of Hayden Flour Mills White Sonora Wheat Berries in a pot, cover in 3 inches of water. Bring to a boil, reduce heat and simmer for 40 minutes or until the wheat berries are softened and plump but still chewy. Set aside to cool.

In a large bowl, add the chopped walnuts, chopped parsley, green onion, figs and cherries to the cooled White Sonora Wheat Berries.

In a separate bowl, mix the dressing ingredients together until the honey has dissolved. Pour the dressing over the salad and toss.

Crumble the goat cheese over the salad before serving.
